Melding India's coastal town flavours with ingredients sourced from New Zealand's West Coast and Southland, or the cuisine from the high hills of the Himalayas with the produce of Aoraki - think rawa fried Havelock mussels, kina rasam, and wild tahr seekh kebabs. Each dish a testament to the exploration of flavours that underscores how our lands and waters have shaped our cuisines, as much as the influences of migration and history.
