Experience bush tucker like you haven’t before. Renowned Indigenous Australian chef Mark Olive brings a four-course meal from the First Nations of Australia to Pōneke Wellington. A Bundjalung man, and specialist in contemporary outback flavours, Mark’s family hails from the Northern Rivers region of New South Wales.
Hosted at the Australian High Commissioner’s residence, the dining experience will feature traditional ingredients including wallaby, kangaroo, crocodile and barramundi, the fresh exciting taste of lemon myrtle, wattle seed, pepper berry, and Mark’s very own native Australian herbs. Finished with a twist on the much-contested pavlova loved on both sides of the ditch. Served alongside the bush tucker are Australia’s finest wines.
Hear the traditional knowledge of First Nations cuisine, learn and experience bush tucker served, piping hot like the red earth itself. Diners are encouraged to bring the unique indigenous flavours they experience at this event to their own kitchens, with an cuisine-inspiring gift to take home.
